Restaurants are inspected, and the inspection is public. That single fact should shape the entire cleaning scope, and in most restaurants it does not, because the cleaning contract was written from a generic template and the inspection checklist lives in a drawer in the office.
So we start from the checklist. Floor and wall junctions, the area behind and under equipment, hand sink accessibility, ceiling vents above the line, walk in floors and shelving. Those items are on your scope because they are on the inspection, and they are the ones that a general cleaning crew never touches.
